Corn and Kumara Brunch Fritters served with grilled bacon and tomatoes

A quick and easy brunch idea to feed the hungry hordes.

Ingredients

1/2 cup kumara, mashed, cooked and cold
1 can creamed style corn (310g)
2 tsp fresh chives, chopped
2 tsp ginger, minced
1/2 cup flour
1/2 tsp baking powder
1/4 cup milk
1 egg

Method

Preparation Instructions

Separate the egg. In a bowl mix together the corn, ginger, herbs, flour, baking powder, milk and egg yolk. Beat the egg white in a clean bowl until stiff. Along with kumara fold beaten egg white into the mixture.

Cooking Instructions

Heat a little oil in a frying pan and cook large spoonfuls of the mixture over a low to medium heat for about 3 minutes each side. Grill bacon rashers and tomato halves under the grill element while making the fritters.

Serving Instructions

Serve in stacks with a dollop of sour cream and sweet chilli sauce.
