Ingredients

3 eggs
220g yoghurt (1 cup)
220ml oil (sunflower)
1 1/2 cups raw sugar
3 cups white flour
1 cup whole meal flour
4 tsp baking powder
1 heaped tsp baking soda
2 cups dates
1 cup orange juice
1 tsp grated orange rind
3 cups mashed kumara (or 4 cups grated)
1/2 tsp cardamom (or 1 tsp cinnamon)

Method

Preparation Instructions

Whisk together eggs, yoghurt, oil and raw sugar. In a separate large bowl sift flour, baking powder and soda. Place dates, orange juice and rind in a microwave proof container and heat for 3-4 minutes in microwave to soften dates and then mash. Add liquid mixture to kumara and cardamom, and then add date mixture, combining gently with flour. Do not over mix.

Cooking Instructions

Bake in large muffin tins at 170 degrees Celsius for about 12 -15 minutes.

Serving Instructions

This recipe makes at least 12 large cafe size muffins, if you use smaller tins it will make more muffins.
