44 medium kumara
3 rashers of bacon

3 medium, roughly chopped, shallots
DRESSING
1 clove garlic
1/4 cup olive oil
2 tbsp malt vinegar
1 tbsp brown sugar
Preparation Instructions
Cube and cook kumara. Roll and de-rind bacon, cut into lengths. Arrange bacon and kumara into casserole dish. Drizzle with oil, season with salt and pepper.
Cooking Instructions
Bake at 200 degrees Celsius for 20 minutes. Combine all dressing ingredients in a jar and shake. While hot add shallots and dressing.
Serving Instructions
Serve hot or cold.
