41 large red kumara
1 large gold kumara
1/2 cup mayonnaise
1/2 cup sour cream
3 spring onions
salt
mild curry powder to taste
walnuts
Preparation Instructions
Peel and dice the red and gold kumara into bite sized pieces. Simmer in salted water until tender. Cool. In a bowl mix the mayonnaise, sour cream, a pinch of salt and curry powder to taste (approx 1-2 teaspoons). Chop the spring onions and add to the dressing. Fold the diced kumara through the dressing and chill in fridge for approx 1 hour prior to serving. Garnish with roughly chopped walnuts.
