4600g orange kumara
2 tbsp butter
1 small onion
2 tsp crushed ginger
2 tsp hot Indian curry paste
1 cup water
3/4 tsp salt
chopped fresh mint or coriander
chopped nuts (eg cashews)
rice or naan
Preparation Instructions
Peel the kumara and cut into 2cm cubes.
Cooking Instructions
Saute in butter with the onion and ginger for about 5 minutes, stirring constantly. Add the curry paste, water and salt. Cover and bring to the boil. Reduce heat and simmer for 15-20 minutes until kumara is tender.
Serving Instructions
Stir in chopped herbs, adjust seasoning and serve, sprinkled with chopped nuts, along side rice and/or naan. Serves 3 to 4 people.
