4400g kumara
250g zucchini (can be replaced with grated squash)
125g carrot
3 tbsp chopped onion
3 cloves garlic, crushed
2-3 rashers bacon, cut finely
1 cup grated cheese
1 1/2 cups white flour
1 1/2 tsp baking powder
1/2 tsp ground mace or substitute with nutmeg
1/2 cup oil
4 eggs, lightly beaten
salt and pepper
Preparation Instructions
Peel kumara and carrots (and squash if using). Grate kumara, carrots, and zucchini and place in a large bowl. Add all other ingredients. Mix well together and pour into a greased shallow 27x17cm baking dish.
Cooking Instructions
Bake at 180 degrees Celsius for 50-55 minutes until golden.
Serving Instructions
Serve hot, accompanied with a mesculin salad and balsamic vinaigrette.
