Kumara and Walnut Bread with Orange Glaze

Kumara and Walnut Bread with Orange Glaze

A nutty bread complimented by an orange glaze.

1 loaf

Ingredients

1 cup oil
3/4 cup brown sugar
2 eggs
1 tsp vanilla extract
1 1/2 cups all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp orange peel
1 1/2 cups cooked, mashed kumara
1 cup chopped walnuts

ORANGE GLAZE
1/2 cup castor sugar
1 tsp orange peel
1 tsp orange juice

Method

Preparation Instructions

Mix oil, brown sugar, eggs and vanilla in large bowl. Sift the flour, soda, salt and cinnamon. Add to the sugar mixture and mix well. Fold in the grated kumara and walnuts. Pour into greased and floured 9x5x3 inch loaf tin.

Cooking Instructions

Bake at 180 degrees Celsius for 55 to 60 minutes. Leave in tin to cool for 10 minutes. Turn onto wire rack and cool completely. Top with orange glaze by mixing the ingredients and drizzling over the loaf.
