24 pikelets1 cup flour
3 tsp baking powder
1/2 tsp ground cumin
1 egg
3/4 cup milk
1 cup cooked, mashed kumara
1 tbsp of fresh herbs of your choice
2 tbsp butter or oil
Preparation Instructions
Combine flour, baking powder and cumin into bowl. In another bowl mix together the egg, milk, kumara, melted butter or oil and chopped herbs. Pour the liquid ingredients into the dry ingredients and mix to combine adding more milk if necessary to make batter that will drop from a spoon.
Cooking Instructions
Cook a heaped teaspoon of mixture in a hot greased pan until bubbles start to appear, turn over and cook the other side until lightly golden.
Serving Instructions
Serve with chutney, pesto or relish and a slice of brie or dollop of sour cream on each pikelet. Alternatively, use your own favourite toppings. These make great canapes for parties. Makes about 24 pikelets, depending on size.
