Low-fat Kumara Salad

Low-fat Kumara Salad

Use low fat dressings for a healthier kumara salad.

Ingredients

3 medium kumara
4 spring onion
2 bananas
1/4 cup lemon juice
1/4 cup low-fat sour cream
1/4 cup light mayonnaise
1 tsp curry powder
salt
freshly ground black pepper
1 tbsp toasted sesame seeds

Method

Preparation Instructions

Peel kumara. Cut into pieces and steam or cook in boiling salted water for 15 minutes or until tender. Drain and leave to cool. Slice spring onions on the diagonal into 1cm pieces. Peel bananas and cut into 1/2cm thick slices. Place in a bowl. Pour lemon juice over bananas and mix to coat. When kumara are cold, cut into cubes. Mix kumara, spring onions and bananas together. Mix sour cream, mayonnaise, curry powder, salt and freshly ground pepper together. Carefully mix through the kumara mixture.

Serving Instructions

Place in a serving bowl and garnish with sesame seeds.
