Ingredients

500g pumpkin
500g parsnip
500g golden kumara
2-3 tbsp olive oil
1-2 tbsp fresh rosemary
1-2 cloves garlic, crushed
salt and freshly ground pepper
juice 1-2 lemons

Method

Preparation Instructions

Peel and cube vegetables and place into oven roasting dish. Sprinkle with rosemary, salt, pepper, crushed garlic and toss in olive oil.

Cooking Instructions

Cook at 175 degrees Celsius until golden, approximately 30 to 45 minutes. Remove from oven, add lemon juice.

Serving Instructions

Blanched green beans, broccoli or asparagus make a colourful addition to this dish. Delicious served hot or chilled, and marries well with roast lamb or grilled lamb cutlets.
