Ingredients

6 medium Delta Sweet Harvest Red Kumara
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp paprika
2 Tbsp olive oil
vegatable cooking spray

Hummus:
5 Tbsp water
1/2 cup sundried tomatoes
2 Tbsp tahini
1 clove garlic
2 Tbsp lemon juice
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp paprika
300gm can drained chickpeas

Preparation Instructions

Preheat oven to 200 degrees Cut each Kumara into 8 wedges, place in a large bowl. Add cumin, salt, garlic powder and paprika, toss well. Drizzle olive oild over wedges, tossing well to coat. Arrange wedges in a single layer on a baking sheet coated with cooking spray. Hummus: Put the water, sundried tomatoes, tahini, garlic, lemon juice, spices and chickpeas in a food processor. Blend for 4 minutes or until mixture is smooth.

Cooking Instructions

Bake at 200 degrees celcius for 20 minutes or until tender.
