Ingredients

4 medium kumara
1 medium onion, finely diced
3 cloves garlic, crushed
1 tbsp oil
1 cup crunchy peanut butter
1 tbsp ginger, minced
1/2 cup sweet hot chili sauce
1 cup coconut cream
1/4 cup lemon juice
1/2 cup water

Method

Preparation Instructions

Cook kumara until tender, dice when cool. Saute onions and garlic in oil until soft. Add remaining ingredients and simmer over low heat, for about 10 minutes, stirring occasionally. Cool. Pour over kumara.

Serving Instructions

Note: if dressing is too thick, thin down with a little cream or water. Garnish with roasted nuts.
