Ingredients

1 tbsp oil
1 onion, finely chopped
3 large kumara
4 cups chicken stock
1 bay leaf
800g smoked fish, flaked
1 cup corn
2 cups milk
parsley to garnish
salt and pepper

Method

Preparation Instructions

Peel the kumara and chop in small chunks.

Cooking Instructions

Boil or steam until just soft. Drain and pat excess water off. Heat oil and fry the onions and kumara chunks. Add the stock and bay leaf and simmer for 5 minutes. Add the smoked fish, corn and milk and simmer for 5 more minutes. Remove bay leaf and season.

Serving Instructions

Garnish with parsley and serve with big chunks of bread on the side.
